Coconut and Kale Curry Rice

Imagine this. It’s a fall evening, you just got off work and now you’re in your pj’s cudding up on the couch holding a hot dish of goodness. You smell coconut and the aromantic spices of curry. Yep, I just painted what could be you soon.  :’ ) Follow along and make yourself a curry dish tonight. 

Side note: I like to use recipes as inspiration. You’ll rarely find me using recipes to the EXACT (unless i’m making something that truly requires it, like I don’t know, a certain cake.)

Here are my reasons: A) nobody’s got time to make sure there is exactly 1 tsp of salt. B) I sometimes don’t have the ingredients on hand so I have to work with what I have. C) I’m just plain lazy to whip out the measuring cup.

So when it comes to this Coconut and Kale Curry Rice dish, I hope you follow along with the recipe BUT also put your own flare into it. Add some spinache, mushroom, carrots, beets… really anything that you have or really like having in your dishes. It’ll release the inner creative chef in you. If you’re not feeling that, follow along down below and I gauruntee, the results will be lip smacking good (oh my god, did I just say lip smacking…). 

I love this dish because only one pan is needed, it’s hearty, creamy and it can be made all under 30 minutes. Dish it up and Enjoy! 

Coconut and Kale Curry Rice

A hearty and creamy one pot meal. Can be made under 30 minutes and requires less than 12 ingredients (not including salt and pepper). 

  • 2 cups cooked basmati brown rice (*or your favorite type of rice)
  • 1 cup kidney beans (or your choice of beans)
  • 1/4 cup vegetable broth
  • 1 large tomato (chopped)
  • 1/2 small onion (chopped)
  • 1 large yellow pepper (diced)
  • 1 cup kale
  • 1/3 cup coconut milk
  • 1 tsp garlic (minced)
  • 1 tbsp curry powder
  • 1/4 tsp tumeric
  • 1 tsp salt (*until desired taste)
  • 1/4 tsp pepper (*until desired taste)
  1. 1. Combine stock and garlic together in a large skillet. Leave until it light simmers.

    2. Add cooked rice. Give it a a few stirs for a minute. 

    3. Add coconut milk.

    4. Add curry, tumeric, salt and pepper. Stir!

    5. Add prepared veggies (kale, tomatoes, yellow pepper, onion)

    6. Cover for 5-8 minutes with a lid. 

    7. Dish it up and enjoy!
