The Quick and Simple Black Eyed Peas Vegan Burger

When I’m out of ideas for dinner or I’m just plain lazy to make anything else, my go to entree is the classic-o vegan burger. Feel free to use whatever hamburger buns or toppings your heart desires– I’m here today to give you my scoop on how to make the perfect bean patty using black eyed peas.

 

The Classic Black Eyed Peas Vegan Burger

  • 3 cups blacked eyed peas (cooked)
  • 2 cups wild rice (cooked)
  • 1 cup oat flour (*blend up old fashioned oats)
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 2 tsp minced garlic
  • 1 tbsp salt

EXTRA: oil spray for cooking, condiments (ketchup, mustard, relish), toppings (lettuce, tomato, vegan sliced cheese), hamburger buns

    1. 1. Mash beans until smooth yet chunky. Combine all ingredients into a bowl. 

      2. Roll patties into a ball and flatten. 

      3. Use a wide pan + turn heat to med/ high

      4. Cook patties, each side for about 4 minutes

      5. Create your own burger. 

      I save the patty “meat” for up to 2 days and cook new ones as I go. My favorite sides to go with these burgers include Red Potatoe Wedge Fries and a hearty salad.
