Vegan Banana Bread
first mix … » 4 medium ripe, spotted bananas
» 1/2 cup coconut sugar
» 1/4 cup coconut oil
» 1/4 cup applesauce
» 1 tsp each of vanilla, cinnamon & nutmeg
» 1/4 tsp salt
then mix …
» 1 and 1/2 cups whole wheat flour or white whole wheat flour
» 2 tsp baking powder
» 1/2 tsp baking soda
& fold together
bake for 30-40 minutes at 350°F. It looks too moist at first and then it sets as it cools down. p.s– I subbed the ¼ cup coconut oil for another ¼ cup of applesauce. I also skipped the nutmeg (none in the pantry). For a crunch, I highly recommend walnuts! For aesthetics, add two slices of a banana at the top 🐵
